I admit it, I love to cook and eat good food but I also want to keep it healthy. Ever believe that you can’t eat good food and it be good for you? Or have you ever said or heard someone else say either they, their spouse or their kids won’t eat veggies? Well this meatloaf is the answer to both those questions. It is packed with three types of veggies and could be considered a whole food because it has protein, veggies and some healthy carbs 🙂 Another amazing Beautiful Knockout Kitchen Creation!!
Veggies Stuff Turkey Meatloaf
- 2 lbs Ground Turkey (93% lean)
- 1 can Rotel Tomatoes (10oz can)
- 2 medium size zucchinis (shredded and set aside for 5 minutes)
- 1 box of frozen butternut squash (12oz – thawed)
- 1 bag frozen chopped spinach (12 oz – thawed)
- 2 whole eggs
- 1/2 onion chopped
- 6 garlic cloves chopped
- 2-3 tbsp No-Salt Garlic Seasoning
- 1 tsp black pepper
Ahead of time thaw all frozen veggies, I usually put them in the fridge the night before. Lightly saute the onions and garlic until they are golden and soft, allow to cool . Shred zucchini and let it sit for five minutes and then squeeze out the extra water. Drain the tomato juice from the can of tomatoes.
Heat oven to 350 degrees
In a large mixing bowl add all ingredients. Wash your hands real good and then mix all the ingredients until well blended I use my hands to mix up the mixture because it is faster than a tool and hey that was the way I was raised. You can let it sit overnight in the fridge so all the ingredients blend together (this is my personal favorite because it enhances the flavor and aroma) or bake it immediately.
In 2 loaf pans or one loaf pan and one 12 muffin pan or two 12 muffin pans, divide the meatloaf mixture into the pans. Put the meatloaf in the oven and bake for approximately an hour to an hour and a half or until the tops are nice golden brown.
Enjoy with a side of green beans or broccoli and maybe some cheesy garlic mashed cauliflower. You will be pleasantly surprised by how nice, juicy and delicious this meatloaf recipe really is. This recipe is husband approved.
