Fall has started and winter will soon be upon us. It is a great time to enjoy this comfort food many of us grew up loving, Homemade Chili. I have put a spin on my chili that includes more veggies and it is so great even your kids will love. It is husband approved and guaranteed to keep you warm, full and healthy.
Knockout Chipotle Chicken Chili.
1.5 pounds of ground chicken (I used chipotle, jalapeno but you could also use chicken chorizo)
2 – 10oz bags of Butternut Squash (I used Stahlbush Island Farms)
2 – green bell peppers – chopped
3 bell peppers (1 red, 1 yellow, 1 orange) – chopped
1/2 onion – finely chopped
2 – 14.5 oz cans Black beans rinsed
2 – 14.5 oz cans Fire Roasted Tomatoes
1 – 10 oz can of tomato paste
Chipotle Seasoning to taste
1 tbsp Coconut oil
**Veggies, Chicken, Coconut Oil & Butternut Squash were all found out Sprouts.
**Canned black beans, fire-roasted tomatoes and tomato paste were all purchased at Fry’s Food
**Chipotle seasoning can be found at either place.
Steps to make this chili:
Thaw butternut squash.
Heat tall pan over medium heat and then add coconut oil. While pan is heating, chop up onions & peppers. When pan is ready add chicken along with peppers and onions.
While you are browning the chicken mixture, take thawed butternut squash and add to vitamix, food processor or blender. Blend into puree, slowly adding om can of fire-roasted tomatoes until mixture is smooth. It will be thick.
Rinse the black beans and set aside. (don’t want to use beans you can leave them out)
Once chicken is cooked. Add the squash puree, black beans, fire-roasted tomatoes, & tomato paste to the pan. Stir until well mixed.
Turn burner to low and allow to cook for 4-6 hours to enhance flavor. If you want to eat sooner you can.
This recipe makes 6 large size servings. I promise you won’t even know it has butternut squash so this is a great way to get your children and spouse to eat vegetables. My husband loves this recipe and thinks the next time we attend a chili cook-off this could just be a winner. So try it for yourself and see if you agree. It is perfect for a cold day or any day you want to spice you dinner time. Warning: depending on how much chipotle seasoning you use will change how spicy it may be, so spice slowly and build up to your favorite.
Dish up a bowl and grate a little cheese if you want or add a drop of plain non-fat greek yogurt for creaminess. Serve with a healthy salad and you have a great meal!!
