If you are like me and my husband, then you too love to eat good food.  We don’t discriminate when it comes to food we both pretty much love almost everything, with a few exceptions.  So when it comes to me trying to stay within the “healthy” area of food some foods seems like maybe I will never get to enjoy them again, like gyros.  Well that is at least until I am able to find, develop, modify and create a version that fits my health conscious mind and still tastes fabulous.  Well we have another winner from the Beautiful Knockout Kitchen:

Gyro Style Pita Sandwich, with a cauliflower pita wrap!

Gyro Style Sandwich

BKO Tzatziki Sauce Recipe

  1. 1/4 Cucumber, peeled, seeded and finely chopped (about 1/2 cup)
  2. Sea Salt
  3. 1/2 cup Plain Non-Fat Greek Yogurt (I like Chobani)
  4. 2 small garlic cloves finely chopped
  5. 2 tsp Fresh Dill, finely chopped
  6. 1/4 cup Feta (I like to use Feta made from goats milk)


Toss the cucumber with 1/8 tsp sale in a strainer/colander and set over bowl or in sink.  Allow to drain for 30 minutes

Once cucumber is finished draining, combine all the ingredients for the sauce into a bowl and stir together.  Set in the fridge.  (This can be made ahead of time, which will allow the flavors to meld together more.)

Cauliflower Pita Bread

  • 1 Large Head of Cauliflower – grated (I use a food processor but you can also do it by hand with a cheese grater
  • 8 egg whites
  • 2 tbsp coconut flour (shifted, use a wire mesh strainer to shift)
  • 1 tbsp Mrs. Dash Tomato Basil Garlic
  • 1 tbsp Mrs. Dash Extra Spicy
  • Pinch of Kosher Salt


Heat the oven to 350.  Grate cauliflower and then put into microwave safe bowl. Cook for 3 minutes and then pour  cauliflower into cotton dish towel and squeeze the water out.  There will be a lot so squeeze as hard as you can until it is not coming out and then place cauliflower back into the bowl.  Add the remaining ingredients to the cauliflower and mix together well.  When adding the coconut flour make sure to shift it over the cauliflower mixture through the wire mesh strainer.  This will make mixing it into the cauliflower easier.

Place parchment paper on a baking sheet.  Spread Cauliflower mixture onto parchment paper and spread out into the size of a pita bread.  This is about a ladle and a half.  Spread out so it is about 1/4-1/2″ thick and about 8″ in diameter, you will be able to fit about two per sheet.  Bake for 12 minutes and then when it is ready flip it and bake it for another 5 minutes.  This will make between 6 and 8 pitas.  Remember to stir the cauliflower mixture each time before spreading out onto the baking sheet.  While these are baking you can make the Gyro Style Meat.  These can also be made ahead of time.

Gyro Style Pita Sandwich Recipe

  1. 2tbsp almond flour
  2. 1 tbsp coconut flour
  3. 1/2 cup Onion chopped
  4. 2 tsp Lemon Juice
  5. 2 tsp Fresh Dill, minced/finely chopped
  6. 3 Cloves of Garlic, minced/finely chopped
  7. 1/4 teaspoon Sea Salt
  8. 1/8 tsp ground black pepper
  9. 8 oz Ground Lamb (or to make leaner, Grassfed Beef or Organic Ground Turkey or Chicken can also be substituted)
  10. 1 small tomato sliced
  11. 1 cup Romaine lettuce shredded


In a food processor, blend onion, lemon juice, dill, garlic, salt, pepper, almond flour and coconut flour into a smooth paste.  It will take about 30-60 seconds.  Put lamb into a bowl and gently mix in the onion puree by hand.  Mix until it is well combined.

Divide into 6 equal portions and roll into balls, then flatten like hamburger patties (slider size, or about 1/2″ thick by 2.5″ across/diameter.

Heat skillet over medium high heat.  Add a little coconut or macadamia nut oil in the pan and heat.  Add the patties and cook until well browned and a crust forms (about 3-4 minutes), then flip. Reduce heat a little and cook for another 5 minutes, until well browned and a crust develops.  When done place patties on a paper-towel lines plate and allow to briefly cool to release a little of the excess fat.

Build your pita sandwich using a cauliflower pita bread.  Place the bread on the plate, top with three of the patties, a couple slices of tomatoes, some Tzatziki sauce and lettuce.  Feel free to add a little Greek Style Olives as well finely chopped.  Serve with some steamed broccoli and enjoy!!
