In a Morning Rush?  Waking up late? Rushing to get to the gym, getting a quick shower, packing your lunch, wait did you remember breakfast.  Mornings can be very hectic with everything we have to do.  Having an easy option for breakfast will help make sure you stay on track.  For me mornings can be extremely busy and sometimes I am rushing so much that if I don’t plan well, I am ordering something through a drive through.  Although I try to keep it healthy, it is still not a great choice.

What I have found for me is that if I already have something ready that I can eat in the mornings especially when I wake up late, I am much more successful during the day in maintaining healthy choices. With that said I have found a great recipe that is super easy and can be prepared in advanced and microwaved in the morning for a fast and healthy breakfast.

Try this quick and easy breakfast solution.


Yummy & Healthy Egg Muffins

  • 6 whole eggs
  • 1 cup milk
  • 14 Egg whites
  • 1 cup shredded Swiss cheese (optional)
  • 1 cup mushrooms – diced
  • 4-6 garlic cloves – finely diced
  • 1 chicken breast – cooked and diced small
  • 6 pieces of natural uncured bacon – cooked and chopped
  • 4-6 loose cups Baby Spinach/Kale mixture chopped
  • 3 tbsp No-Salt Seasoning (or to desired taste)
  • 1 tbsp Turmeric (or to desired taste)

IMAG2671Preheat over to 350 degrees.  In a bowl mix eggs, egg whites, milk, cheese and seasonings.  Set aside.  In another bowl put in spinach/kale mixture and then use a circular pizza cutter in the bowl to chop the spinach and kale mixture. (This will help decrease the space the spinach and kale takes – basically it condenses it/compacts it so you can get more in your recipe).  Chop all the other veggies. Heat a saute pan, and then spray with coconut oil, saute all the chopped ingredients for a few minuted until mushrooms and spinach/kale are tender.

IMAG2673Add meat mixture to the egg mixture and stir.  In a large muffin pan, spray the pan and then scoop in egg mixture about 2/3 of the way full.  Bake for about 30 minutes, or until eggs are set and lightly browned on top.  This recipe will make 12 large muffins.  Serve two egg muffins with an apple or grapefruit for a healthy and delicious fat loss meal.
