Chicken & Veggie Fried Cauliflower Rice
I have been working on going grain free – not just gluten-free but grain free. That includes rice, oatmeal along with breads and pastas. I know this may seem a little unreal especially with what we have grown up learning, “that grains are healthy for us.” However as I have learned this may not be so true. Either way, I wanted to share this awesome recipe that we enjoyed earlier this week for dinner. It was truly amazing and my husband said he couldn’t even tell that the cauliflower wasn’t rice. This is definitely worth a try 🙂 I hope you enjoy it as much as we did!
1/2 Head of Cauliflower (10-15oz) grated (use a food processor)
2 tbsp of Coconut Oil
Mrs. Braggs Amino Acids (substitute for soy sauce)
3 eggs beaten
1 small onion finely chopped
2 cups broccoli chopped small
1 cup mushrooms – chopped
1 cup asparagus chopped small
1 cup Celery diced
1 pound chicken breast thinly sliced and chopped (about 10 minutes before cooking drizzle some Mrs. Braggs Amino Acids & Seasoned Rice Vinegar, also add pepper, garlic and ginger (optional)
In a food processor, pulse cauliflower until it appears to be the size of rice – set aside (also can use a grater attachment if your food processor has it.
Heat pan and add 1 tsbp coconut oil, heat and add chicken & 1/2 onion, cook chicken until no longer pink inside, remove from pan and set aside – leave juices of chicken in pan
In same pan – add 1/2 tsbp coconut oil and then add broccoli, celery, asparagus, & 1/2 of remaining onion, cook until almost tender 3-5 minutes then add mushrooms and cook for a few more minutes.
Add in chicken mixture, drizzle more Mrs. Braggs Amino Acids to taste, cook for 1-2 more minutes and then remove from pan. Leave juices in pan.
In the same pan, heat 1/2 tbsp of coconut oil, add remaining onion & cauliflower to the pan. stir fry until tender but not mushy, drizzle a little more Mrs. Braggs Amino Acids
Push Cauliflower to one side and pour in beaten eggs, lightly scramble and then mix into cauliflower. Add in the chicken and veggie mixture once eggs cooked and stir together.
Serve hot and enjoy! Makes 3-4 healthy portions. Do not freeze left overs just eat the next day – that is if you have left overs 🙂
