Do you love Mexican food?  Well in our house we love Mexican food.  The difficult thing is finding a healthy way to enjoy Mexican food night.  A long time ago I found this easy recipe that I love and have adapted to be even healthier.

BKO Taco SaladBeautiful Knockout Taco Salad

Ingredients:

  • 1 green bell pepper – chopped
  • 1 red bell pepper – chopped
  • 1/2 medium onion – finely chopped
  • 3-4 cloves of garlic – finely chopped
  • 1 lb extra lean ground turkey or grass fed beef
  • 2 tbsp Mexican or Taco Seasoning (Low Sodium)
  • 2 tbsp Tomato Paste
  • 8 oz Plain Tomato Sauce like El Pato
  • 12 cups of Romaine lettuce, chopped
  • 1 avocado, chopped and separated into 4 servings
  • 1 cup chopped tomatos
  • 1 cup green or red salsa
  • 4 tbsp Plain Non-Fat Greek Yogurt (Substitute for sour cream)

Preparation:

Heat pan and add a little coconut oil when heated.  Add first six ingredients and brown turkey/beef until cooked all the way through.  Once cooked, add in tomato paste and sauce, you can add a little more seasoning if you desire, season to taste.  While meat mixture is cooking, divide lettuce into four servings (3 cups per serving more if desired).  Once meat mixture is done separate into four equal servings.  Top one serving onto bed of lettuce, top with 1/4 cup of tomatoes, 1/4 of avocado, and 1/4 cup salsa.  Top with 1 tbsp Greek Yogurt and/or black olives. Mix and enjoy!!
